While the greenest option is always to wash and reuse your everyday dishes, if you need to resort to disposable dishes, then you should look for the greenest ones you can find. Green disposable dishes can be made of wheat paste, corn starch, a limestone and starch mixture, and bagasse (processed sugar cane pulp).
These dishes are as strong and versatile as ordinary paper or Styrofoam plates, if a tad more expensive — and when you’re done with them you can toss them into the compost heap, where they’ll decompose perfectly fine. There’s even compostable cutlery made from corn and potato starch!
