If you’re suffering through a summer drought, you don’t have to watch your garden wither away due to lack of water while you wait for your vegetables to mature; nor do you have to waste water to get them all through to harvest. There’s a third choice: why not harvest part of your crop immediately, while it’s still immature?

Not only do you increase the chances of the rest of your crop making it through to maturity, you’ll get to enjoy great-tasting tender “baby” vegetables that are easier to cook than their larger brethren, and require less preparation time.
