Beets are often-overlooked vegetables that happen to grow very well organically. President Obama’s recent dissing of beets aside, the sweet tubers (also known as beetroot) are jam-packed with fiber and nutrients like manganese, vitamin C, and phosphorus, and they’ve been shown to help fight high cholesterol, high blood pressure, and cancer of the stomach and colon.
Beets are a fast growing crop, especially when gifted with a little organic fertilizer or compost, and both the roots and the tops are edible, if you’d like some exotic greens in your salad. Plus, the deep red color of the root adds an interesting visual element to any dish they’re a part of.
