One form of organic mulch that doesn’t get a lot of press is hay mulch. Hay is generally cheap and easy to find, and a 3-5 inch layer of hay laid over your veggie plot in the fall provides a rich source of nutrients that you can easily pierce with a trowel to set out your new plants come springtime. In addition, individual seeds can be pushed into the ground through the hay mulch cover. Among other things, hay mulching will also help even out the pH level of your soil if used continuously for several years, reducing both alkalinity and acidity to nominal levels. Alfalfa seems to work well for this use, though any hay is fine.

Thanks for the info! I didn’t realize it balanced pH. I use it on my own garden – and when it sprouts, I just toss the fresh green shoots back onto the mulch layer.
